Raw Kelp Noodle Pad Thai with Tamarind Peanut Butter Sauce

1 package of Kelp noodles (approx 340 grams) 1 Zucchini 1 Red bell pepper 1 Yellow bell pepper Green beans Scallions Cilantro Peanuts 1. Rinse kelp noodles and place in large bowl 2. Dice zucchini and peppers and add to bowl 3. Cut off ends of fresh green beans, cut in half, and add to bowl 4. Roughly chop cilantro and scallions and add to bowl with peanuts 5. Add sauce 6. Mix all together and enjoy! For the sauce:

1/4 cup Peanut butter 1/4 cup Water 1 tbsp Tamarind sauce 2 tbsp Coconut aminos 3 tbsp Sesame oil 1 tsp Ground mustard 1/2 tsp Ground ginger Juice of 1/2 a lemon Pinch Himalayan pink salt Cayenne pepper to taste Add all to bowl and whisk until combined.
